Mama Aguiar’s Pumpkin Spice Sweet Bread

Mama Aguiar’s Pumpkin Spice Sweet Bread

So, now that Halloween has passed, I finally feel safe declaring the pre-Holiday season upon us. I say “pre-Holiday” simply because I still take offense to any Christmas paraphernalia going up before Thanksgiving. But still, the weather is cooling down, and a festive vibe is starting to fill the air. That, and the aroma of Pumpkin Spice Everything…

How appropriate, then, that my mom would have the perfect recipe to cook at this time of year. Seriously, it’s a Pumpkin Spice Sweet Bread, how could it be any more perfect? My mom bakes it every year as a way to get everyone in a festive mood, and also bakes enough to give out to all of her neighbors as gifts. Truthfully, it doesn’t feel like the Holidays to me until I’ve had a slice or two of this stuff, and the neighbors genuinely look forward to getting their loaves every year. Actually, if you go back to the beginning of one of Will’s old videos, you can see us making this bad boy:

So anyways, without further ado, here’s the recipe—from my mom’s kitchen to yours:

  • 3 cups sugar
  • 1 cup oil
  • 4 eggs well beaten
  • 3 ½ cups flour
  • 1 ½ tsp. salt
  • 2 tsp. soda
  • 1 tsp. nutmeg
  • 1 tsp. cinnamon
  • 1 cup chopped nuts
  • 1 can (1 lb.) pumpkin

Combine sugar, oil, eggs and beat thoroughly. Combine dry ingredients and mix well. Then add pumpkin and nuts. Mix until well blended. Pour into two loaf pans greased. Bake 350 degrees for 1 hour and 20 minutes. Cool 10 minutes on wire rack. Freezes well.

NOTE: You can use this recipe to make smaller loaf pans (mini) or muffins but just need to keep an eye on them while cooking because they won’t take quite as long. They are done when a knife inserted in the middle comes out clean.
