Mama Aguiar’s Corn Casserole

Here’s another quick and dirty recipe post, straight from my mother’s kitchen to yours.

Any time we get together over the holidays, pretty much from Thanksgiving to pretty much New Years, my mom makes it a point to make this corn casserole. It’s quick, it’s easy, and so many people love it. To date, it’s still one of my little brother’s favorite foods. If that’s not an endorsement, I don’t know what is…

Mrs. Aguiar’s Corn Casserole
From: It Fills Me With Joy Cookbook

1-17 ounce can corn
1-17 ounce can creamed corn
1-7 ½ ounce corn muffin mix
¼ cup melted butter
2 beaten eggs
1cup sour cream

Mix all ingredients together and bake in greased 9”X13” pan at 350 degrees. When about done, sprinkle with grated cheese and brown a few minutes. Bake for 30 minutes or until well cooked and slightly browned edges.

Yeah, I told you…easy, right? It’s a bit late to use this recipe for the holidays, but it will probably go over just as well for Easter dinner!

  3. I make this but I add a small can of diced green chiles and sometimes I put grilled chicken breast in it too. I actually learned it from a Mexican friend who put in the UC Santa Barbara International cookbook one year when I went to school there. Every year for international day we would taste all the different foods from different cultures during the international festival. I try to go to any I hear about and wish we had more of these in the USA. I love different cultures and their foods, but then I am from Swedish ancestry and dried fish and bread in water gets really old, lol!
